Semi-processed products “Pane e Fantasia” - Pane al Latte

Basic recipe
Pane al latte Kg. 10
Water Lt. 5
Beer yeast Gr. 250-300
Salt Gr. 200
Procedure
Knead all ingredients for 3 minutes at 1st speed and 10 minutes at 2nd speed. Let stand for 10/15 minutes. Cut into pieces of about 100 gr., round them and flatten the pieces. Let leaven for 45 minutes. Bake with steam at 230°C for 10/15 minutes.
