Basic recipe

Gusto Patata	Kg.	10
Water	Lt.	5
Beer yeast	Gr.	300
Salt	Gr.	220

Procedure

Knead all ingredients for 3 minutes at 1st speed and 12 minutes at 2nd speed. Let stand for 15/20 minutes. Cut into pieces of 100/120 gr. and shape them into baguettes. Let leaven for 30 minutes. Bake with steam at 220°C for 25-30 minutes. Open valves halfway through cooking.
