ProcedureUse a spiral kneading machine to mix all the ingredients for 4 minutes at the 1st speed and 10 minutes until dough is smooth. Divide into pieces of 400-450 gr. and round. Let stand for 40 minutes. Form loaves, flatten and wrap them by hand as the molding machine would. Halfway through leavening cut the surface with 2 or 3 cuts. Bake with steam at 220°C for 35-40 minutes. For best results, just before cooking, open valves.
